I absolutely love Brussels sprouts, they are a great source of Vitamin C and Vitamin K. But sometimes the ones at restaurants are drenched in oil or too burnt because they were going for a crispy Brussels sprout dish. This recipe is a steam-cooked Brussels sprout with a hint of turmeric and walnuts (optional). It's super easy and quick so if you need an additional vegetable dish I would recommend whipping this up!

I ate a mix of frozen foods, take-out, and occasional fast food, growing up. But my family did make a point to cook when they were able to making chaos in the kitchen sometimes steaming and cooking all sorts of things with lots of different spices and aromas. There was this one dish that used to make me crinkle my nose. Brussels sprouts. The mini cabbage-looking things were like the superheroes of the veggie world that everyone loves now but when I was a kid no kids around me liked them.

Back then, my relationship with Brussels sprouts was I'll push you around, give me enough sauce and I'll smother you. I'm not going to lie. It wasn't love at first bite. But here's the thing about growing up your taste buds seem to evolve fast. And of course, years later I first became an unhealthy vegan eating mostly carbs. But now I am a healthier version of vegan who incorporates lots of vegetables including Brussels sprouts!! And Brussels sprouts with all their nutritional benefits and that hearty taste have become one of my favorite things to cook!

Fast forward a few years, and I found myself in this unexpected culinary love affair with Brussels sprouts. How did that happen? Well, it's like my palate decided to throw a surprise party, and the sprouts were the guests of honor.

So, if you're still on the fence about Brussels sprouts, fear not! Sometimes, all it takes is the right recipe to turn a skeptic into a fan. Who knows, you might just find your own unexpected veggie love story. Happy cooking! 🌱✨
